oberve_field inconsist with observe_form

So a funny thing was happening on the way to POSTing from an observe_field on a text area... whenever an ampersand (&) was in the text, the params passed in would break... a clear sign that the value on that field was not being properly escaped.

The simple solution is to change your :with => 'field' in observe_field to :with => "'field=' + escape(value)"

Oddly, observe_form does not have this problem.
